Mutton Biriyani Non Vegetarian Recipe

India is a land where the genuine biriyani has been so vastly experimented with and been cooked to book itself into one of the best recipes of the country. Beautifully aromatic and blended with spices, rice and meat, Biriyani, has long since been the favourite cooks everywhere. Here is a recipe from one of our finest chefs.

Ingredients

Rice basmati 100 gm
Lamb cut 150 gm
Lime 1 no
Almond 50 gm
Mint leaf 20 gm
Ghee 50 gm
Coriander chopped 30 gm
Onion sliced 110 gm
Green chili chopped 5 no
Garlic paste 10 gm
Curd 100 gm
Milk 100ml
Red chili 5gm
Turmeric 3gm
Cardamom 4no
Cinnamon 4no
Cloves 4no
Bay leaf 4no
Saffron 1gm
Salt 5gm

Method

  • Grind red chili, garlic and nuts to a fine paste
  • Sauté onion to brown and crisp
  • Add meat and little water to cook the meat
  • Par boil the rice to ¾th doneness
  • Add powdered cardamom, clove, cinnamon, turmeric, chopped green chili, coriander leaf and mint to hang curd
  • Add the mixture to mutton
  • Add lemon juice
  • Dissolve saffron in milk and sprinkle to rice
  • Layer the meat and rice in a thick bottom pan
  • Pour extra milk and cover the pan
  • Cook for 1 hour on a hot plate and serve with brown onion
