Kodai Koora Varuval
A succulent and spicy dish

This dish is a fantastic fusion of the ancient Tamil cuisine & the charming Spanish cuisine. It is a very light & healthy preparation. This is a signature dish of Tamil Nadu where the chicken gets a splendid curry leaf flavour. In short, this is a chicken Varuval (Tamil word for ‘fry’) made in a different way & it tastes different too.

Method
- Cut chicken, zucchini, onion, bell pepper & tomato in cubes.
- Marinate them with 1 tsp olive oil, paprika, yoghurt, cumin powder, lime juice, garlic & ginger paste, chopped curry leaves, salt & pepper. Keep it aside for two hours.
- Put all of them in the bamboo squeezer one by one. Then cook on a grill.
- Serve the preparation with spicy salsa
